Cottage Cheese Casserole

Ingredients:

  • 2 cups cottage cheese
  • 1 cup cooked pasta (like egg noodles or macaroni)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 cup chopped spinach (fresh or frozen, thawed and drained)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)
  • Olive oil or cooking spray

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. Cook the pasta: If you haven’t already, cook the pasta according to package instructions until al dente. Drain and set aside.

  3. Mix the filling: In a large bowl, combine the cottage cheese, cooked pasta, chopped spinach, 1/2 cup of shredded cheddar cheese, eggs, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.

  4. Prepare the baking dish: Grease a 9x13-inch baking dish with olive oil or cooking spray.

  5. Assemble the casserole: Pour the cottage cheese mixture into the prepared baking dish. Spread it evenly. Top with the remaining cheddar cheese and sprinkle breadcrumbs on top if using.

  6. Bake: Bake for about 30-35 minutes, or until the casserole is set and the top is golden brown.

  7. Serve: Let it cool for a few minutes before serving.

This casserole is creamy, cheesy, and a great way to use cottage cheese! Enjoy!
